The online shops of the “Domaine Du Calabrun” suggest a range of two different olive oils.

    - The AOC Aix en Provence fruity green olive oil which is a mixture of Aglandau and Salonenque, In your mouth, this oil tastes like dry fruits, artichoke and freshly cut herbs . This oil which has a pronounced taste will be the ideal seasoning for your Carpaccio, your steak tartar and other meats or for your raw fish.

    - The AOC Aix en Provence Fruity Black olive oil is made with the same mixture as the fruity green olive oil (this olive has matured for around ten days). This maturation makes the oil taste like “underground” , mushrooms as well as cocoa. The fruity black olive oil will more likely accommodate your dishes with fish but you will also use it to season mashed potatoes or a ‘ratatouille’.
